Located in Israel’s historic Ayalon Valley, where the biblical hero Joshua triumphed over the Five Kings, Clos de Gat has been producing wine for over three millennia since the construction of the ancient winepress, or “gat,” on the estate. Winemaker Eyal Rotem established the contemporary winery in 1998 in partnership with Bordeaux-based negociant Maison Sichel. Prior to planting his initial vineyards, Rotem meticulously surveyed the land, selecting grape varieties that harmonize with the soil and geological makeup.

Renowned for its outstanding microclimate and limestone foundation, the region is esteemed as one of Israel’s premier wine-producing areas. Rotem prioritizes the use of indigenous yeasts for fermentation and refrains from fining or filtering his wines to preserve the authentic terroir and grape characteristics. By rigorously pruning his Merlot vines, Rotem ensures low yields and superior quality fruit for this wine.

The youthful wine undergoes a 14-month fermentation in specially imported French oak barrels, resulting in a luxurious, full-bodied red wine with velvety tannins and bold flavors of cassis, dark berries, and chocolate.

Decant this wine for about an hour before serving. It is a flavorful blend of herbs and fruits, crafted from 100% Garnacha grapes grown in the mountains west of Madrid. The wine greets you with a complex aroma of raspberry, strawberry, and plum, complemented by subtle hints of orange zest, pepper, black tea, and dried herbs.

The grapes were cultivated in granite-rich soils on steep inclines in the Gredos region. The young Comando G winery was established in 2008 by friends Fernando and Daniel, who drew inspiration from their favorite childhood cartoon. They aimed to push the boundaries of Garnacha winemaking by working with some of the region’s oldest and most challenging vineyards.

Their vineyards, located across Madrid, Castilla La Mancha, and Castilla y Leon, are all tended to biodynamically, highlighting the unique terroir of each plot. Despite its humble village-level designation, this wine offers exceptional quality at a great value. The palate reveals a velvety texture with deep flavors of dried herbs and a mix of black and red fruits.

The oak influence is seamlessly integrated, and a distinct mineral edge lingers on the finish. La Bruja de Rozas is an ideal wine to pair with dishes like roast chicken, pork, or robust cheeses.
