Decant this wine an hour before serving. Wine production began over 3000 years ago at Clos de Gat, where the winepress or “gat” was first built. The modern winery, established in 1998 by Eyal Rotem and Maison Sichel, boasts 19 hectares of vineyards in Israel’s Judean Mountains, specializing in Mediterranean wines made from international grape varieties.

This robust Cabernet Sauvignon is made from carefully selected grapes grown in limestone soils. Eyal uses natural wild yeasts for fermentation to preserve the grapes’ natural characteristics and ages the red wine in oak barrels imported from France. After 12 months in oak, the Cabernet Sauvignon is bottled without filtering, showcasing rich cassis, black cherry, and plum aromas.

The first sip reveals a full body, smooth texture, and firm tannins suitable for aging. The palate presents hints of Mediterranean herbs, cigar box, and woodsmoke from oak maturation.
